One of the must do things for us in Thailand was to take a cooking class.  We both love Thai food and were interested in knowing what all of the wonderful spices and veggies were that they used in their dishes.  After reading a few blogs we decided to head to a course on Ko Lanta at Time for Lime.  This cooking school was started nearly 10 years ago and the proceeds support an animal shelter opened by the owner.  They are also very vegetarian friendly and make substitutions for everything on the menu. Koh Lanta, Thailand is a beautiful island off of the southwest coast that is home to fisherman, farmers and now tour guides for the tourism business that has taken off here in recent years.  Getting there was quite the adventure as we hopped on a speed boat from Koh Lipe.  It was packed full of travelers and vacationers that filled the seats and just about every square inch of available space that wasn’t occupied by luggage.  The boat maybe should have had thirty people on it, but instead had fifty-two.  We were a little apprehensive when we reached Continue Reading

Here we are in country number 8.  I wasn’t sure coming to Thailand was going to be for us.  I had heard lots of people rave about it, but when asking why they liked it so much it was usually something about the beaches.  Although I am a beach girl, I felt like I wanted a little more.  We headed to Thailand from the Island of Langkawi, Malaysia to Koh Lipe Thailand by ferry.  It was an easy journey and hassle free immigration point.  Koh Lipe is a tiny island and from first glance it appears to be laid back and a great place to spend a few days.  Unfortunately we weren’t able to find Continue Reading
